When people talk about Beijing, they always think about the well-known tourist sites, such as the Great Wall, the forbidden city, the summer palace and etc. While those are historical sites that are definitely worth visiting, from my perspective, I am always interested in learning about how the locals live their lives every time I visit a new place. One of the best ways to learn about a culture is through its food. Food is an important part of a culture. Traditional foods have their own backgrounds and are passed down generations after generations. In today’s presentation, I will share with you 2 classic local cuisine in Beijing that you should not miss if you are there.

First, the Beijing Fried Sauce noodle is something that you cannot miss, which is also known as Zha Jiang Mian. It is one of the most well-known and iconic noodles that originates from Beijing. The noodles are made with wheat, while the black sauce is made with broad-bean paste. And there are vegetables on top, including bean sprouts, fresh cucumbers, red reddish and salary. In order to have the best Beijing Fried Sauce noodle, I recommend you go to small restaurants hidden in the alleyway instead of the five-star hotels, because the flavors that is embraced by the neighbors are the best. My favorite store to get the Fried Sauce noodle in Beijing is a restaurant called “Qi Xun Ba Zhao.” Literally the meaning of the restaurant is that it is going to take you seven tries to find this place, and you are going to find it at the eighth time. This is to describe how hidden it is in the alley.

Second of my favorite Beijing foods is called the Door Nail Meat Bun. It looks like a giant fried dumpling made with beef, five spices and minced ginger. It sure has a unique name because of the history behind it. Back in the Qing dynasty, the first lady emperor of China, her name is Cixi. She is also known as the dragon lady. Back then, every dinner she eats, it has to 108 different dishes, because she does not want to get poisoned. She only tries a few bites by her own choices so no one could poison her by poisoning her favorite dish. One day, she gets so tired of the same dishes every day, so she asks the kitchen to make her a brand new 108 dishes by the next day. The kitchen freaks out because they do not have enough time to do that. However, by the next day, the kitchen managed to make 107 new dishes, but they were one dish short. By that time, the head of the kitchen saw this new cook making his own dinner in the corner, so he decided to take it to serve as the last dish. They put this dish at the corner of the table, hoping the dragon lady would not see it. Though luckily or unluckily, the dragon lady saw it and tried it. Surprisingly, she really liked it. The next day, she called this new cook to come in and see her and asked him what the name of the dish is. The new cook did not have a name for the dish yet, but he was kneeling in front of the dragon lady, and he saw the door nails on the walls of the forbidden city. And he found that the shape of the meat bun really resembles the door nails. So, he came up on his feet and told the dragon lady that the dish is called the door nail meat bun. Since then, this dish passed along generations and became an iconic dish of Beijing.
